When we prepare our dishes and menus we consider several factors. We know that today prevail many aspects and that we must be aware of many things, but for us the main and most important is the taste and original product. Trying to respect  that basis and the origin, we started an exercise that I like to call “The dish in blank”. This is perhaps for me one of the best moments that gives us our work and as I say in lectures or when impart a course, that moment is very similar to the fact of cultivate. The first idea can be represented as a seed that is planted in my head and from which a dish begins to develop, which it’s accompanied with sauces, shades, shapes and colors, where can develop here all the technical and textures we deem appropriate so that the end result be aesthetically beautiful.
We offer a menu where we let our customers to choose between different options being himself who organize their menu in three or four phases. But for those who want to get carried away and further expand the experience we propose Somnis Menu will vary according to the season and where it’s we who organize the trip for our dreams.
